Oh! Hello stranger!

This month will be a fun/challenging month for vegetarian/vegan eating.... I have two camping trips planned!
For the first trip, I'm just doing light life vegan brats for dinner and bagels for breakfast. Apparently Mama Ross made me two sausage-free breakfast burritos (yes, egg), here's hoping she remembered!
At the end of the month, I have another trip where I plan to make my meals as simple as possible, as I plan to drink most of my meals!!
Here's my foil pack recipes:
*INDIAN**
*Potatoes (either bagged or half cooked and diced at home)
*Frozen peas
*Onion (prediced)
*Curry powder
*Cilantro
*Jasmine Rice

Everything in a foil pack, into the coals to get hot!!
Same goes for this one:

~~MEXICAN~~
~ Black beans (canned)
~ Onion (prechopped)
~ Frozen Corn
~ Rice (precooked)
~Burrito seasoning (or fajita, I don't like taco seasoning, too salty and tastes beefy)
~Cilantro
~Lime to squeeze the crap out of after I open the foil pack.
Either would also be good in a warmed tortilla. I could even get it toasty on the camper grill!!

Small failures are lessons in strength

I am doing terribly at trying to regain my vegetarianism. I have had sample bites (grocery store) of chicken and sausage the past two days.
It's hard when you e allowed yourself to be "free" in a sense; when you've allowed yourself to say "yes", and then you have to go back to saying "no".
I'll get there. Help me get excited.

Stupid easy burrito

Half can of (no lard) refried beans (I got chilli lime flavored ones), cup of prepared white rice, some diced jalepenos, frozen corn, black bean salsa, mix in a Tupperware, pack 2 small tortillas in your lunch bag, pack half a lime, assemble in the teachers lounge, squeeze the shit out of that lime, breathe in the jealousy around you. No picture because I inhaled it, and the other teachers would be all, "psssst she's taking pictures of her food".
Cheap, semi nutritious, fast, filling.

TODAY IS THE DAY

Today is the day. Today is the day I felt physical exhaustion living in this body. Today is the day I felt emotionally saddened by looking at the scale. Today is the day I felt uncomfortable wearing *clothes*. Today is the day I did not recognize the look and feel of my own body. Today is the day my athletic inner self could not understand how I got here. Today is the day I feared would come. Today is the day I reached out to a friend. Today is the day I decided to return to *healthy* *full-time* vegetarianism, with a great attempt at veganism. Today is the day I stop rationalizing. Today is the day I start moving, *everyday*.
Today is the last day. THE VERY LAST DAY.

Looooong time coming.

I made some pretty bad ass eggplant parm the other day, but it was more eggplant swiss.
Cut into slices (fat ways) dredged it in egg, then crushed up French's fried onions, then lightly fried, then stuck it under the broiler with a tiny piece of swiss on top. Then fancy marinara. ( I eat marinara and spaghetti sauce so sporadically that I tend to buy the fancy special flavored ones, that are typically a buck or two more expensive. its always completely worth it.)

I'd like to come back to this every now and then.
I'd also like to be a copycat of my dear friend Erika the teaching queen and start a teaching blog.

Indian Stir Fry with noodles





Cubed tofu lightly fried in shallow oil, peas, broccoli, onion, chinese noodles, and Good Korma Simmer Sauce .

I also bought the Rogan Josh simmer sauce and wish I had used that instead because I like spicy.
